The Miyabi 5000MCD 20 cm Gyutoh is an exceptional chef's knife with a thin yet stable blade, ideal for precise cuts of meat, fish, and vegetables. It is crafted from MicroCarbide MC63 powder steel, encased in 100 layers of stainless steel, resulting in a hard, wear-resistant blade with a beautiful damask pattern. The CRYODUR ice-hardening process ensures a long-lasting sharp edge. The knife features a symmetrically honed edge of 19°, suitable for both left- and right-handed chefs. The D-shaped handle made of masur birch wood offers excellent grip and comfort, with perfect balance between the blade and handle for optimal control.
