The Yaxell Taishi series is imbued with craftsmanship and precision. With a remarkable VG-10 core that reaches a hardness of 61 Rockwell HRC, surrounded by two layers of high-quality stainless steel with a refined tsuchime, or hammered surface. This subtle texture reduces the contact surface with the material to be cut, promoting effortless slicing. The gradual transition from the outer layers to the core results in a beautiful wavy pattern. The knives are not only resistant to corrosion but are also extremely suitable for precise cutting of meat, vegetables, and even acidic foods.
A Harmonious Blend of Material and Design
The ergonomic handles made of food-safe black beech pakkawood form a harmonious unity with the sharp blades. The flowing blade transitions seamlessly into a brushed bolster, which perfectly connects to the pakkawood handle. The distinctive Yaxell logo adorns the back of the bolster, adding not only aesthetic value but also contributing to the excellent balance of the knife.
Outstanding Features:
Crafted in the historic heart of Seki City, a town with more than 700 years of tradition in sword and knife making.
The knives feature a VG10 stainless steel core, surrounded by high-quality stainless steel on both sides, for superior corrosion resistance and strength.
With a hardness of 61 Rockwell HRC, these knives are exceptionally long-lasting sharp.
The hard core allows for a smaller sharpening angle, making them much sharper than traditional European knives.
The handles are made from high-quality black beech pakkawood, ensuring a comfortable grip and beautiful appearance.
The interplay between the blade and stainless steel bolster provides excellent stability and balance.
Discover the perfection of Yaxell Taishi knives, a symphony of masterful craftsmanship and refined elegance, where Japanese tradition and modern design converge. Experience the difference and elevate your culinary creativity to new heights.
VG-10 Core
VG-10 is a cutlery-grade stainless steel produced in Japan. The name stands for V Gold 10 ("gold" refers to quality), or sometimes V-Kin-10 (V?10?) (kin means "gold" in Japanese). It is a high-carbon stainless steel, consisting of 1% carbon, 15% chromium, 1% molybdenum, 0.2% vanadium, and 1.5% cobalt.[1] The VG-10 stainless steel was originally designed by Takefu Special Steel Co. Ltd., located in Takefu, Fukui Prefecture, Japan. VG-10 has a hardness of HRC 61 (Rockwell)
Pakkawood
Pakkawood is a wood composite material first described and patented in 1969 by Tashiaki Oishi and is widely used for kitchen utensils. Its advantages are:
Durability: The compressed and hardened nature of pakkawood makes it resistant to cracking, warping, and general wear, making it ideal for creating handles that need to withstand repeated use.
Aesthetics: Pakkawood has an attractive and natural appearance, similar to real wood. It often has a marbled or striped pattern that gives a unique look to the finished product.
Water Resistance: Thanks to its impregnation and compression, pakkawood is resistant to moisture. This makes it suitable for use in damp environments such as kitchens.
Ease of Maintenance: Pakkawood is generally easy to maintain. It can be cleaned with mild soap and water and typically does not require special treatment.
