Preparation method for speculaas cookies:

  • 250 grams of speculaas cookie mix
  • 100 grams of butter in cubes
  • 20 grams of egg (use the remaining egg for brushing)

Ensure all ingredients are at room temperature. Put all the ingredients in a large bowl and rub them together with your hands until a cohesive dough forms. Let the dough firm up in the refrigerator for 1 hour. Then roll/press the dough on a board dusted with flour. Release the cookie from the board onto a baking tray lined with baking paper. Brush the cookies with the remaining egg. Bake them in a preheated oven at 170°C (fan oven 160°C) for about 12 to 15 minutes until light brown. Let the cookies cool down.
